Sweet Potato, Coconut and Ginger Soup

Serves 4 

Ingredients: 

  • 100g onion

  • 15g garlic 

  • 10g ginger

  • 6g paprika 

  • 6g cumin 

  • 500g sweet potatoes

  • 1L chicken stock 

  • 400ml coconut milk

  • 20g spring onions

  • Chilli flakes, to serve

Method: 

  • In a medium pot with a lid fry the chopped onion, garlic and ginger in some vegetable oil on a medium for 10 mins to soft. Try to avoid any browning as this can make the taste slightly bitter. 

  • Add the peeled and chopped sweet potatoes along with 1 litre of chicken stock. Bring everything to a boil, cover and simmer for 30 mins until soft.

  • Stir through the coconut milk, making sure to set aside a small amount for later. 

  • Blitz everything in a blender until the soup reaches a lovely smooth consistency. 

  • Divide between 4 bowls then drizzle with the coconut milk from earlier.  Sprinkle with the thinly sliced spring onions, chilli flakes and some pepper then enjoy!
