Sweet Potato, Coconut and Ginger Soup
Serves 4
Ingredients:
100g onion
15g garlic
10g ginger
6g paprika
6g cumin
500g sweet potatoes
1L chicken stock
400ml coconut milk
20g spring onions
Chilli flakes, to serve
Method:
In a medium pot with a lid fry the chopped onion, garlic and ginger in some vegetable oil on a medium for 10 mins to soft. Try to avoid any browning as this can make the taste slightly bitter.
Add the peeled and chopped sweet potatoes along with 1 litre of chicken stock. Bring everything to a boil, cover and simmer for 30 mins until soft.
Stir through the coconut milk, making sure to set aside a small amount for later.
Blitz everything in a blender until the soup reaches a lovely smooth consistency.
Divide between 4 bowls then drizzle with the coconut milk from earlier. Sprinkle with the thinly sliced spring onions, chilli flakes and some pepper then enjoy!
