Garlic and Chilli Cucumber Salad with Feta and Toasted Almonds

This dish is all about crispness, zing, and a marinade that'll leave you wanting more. It's light, it's easy, and it's downright perfect for any summer menu. With cucumber ribbons and sliced radishes, dressed in a tangy marinade - we then take things up a notch with aromatic dill, a tad of crumbled feta, and toasted almonds that bring the crunch.

Serves 2

Ingredients:

- 1 large cucumber

- 15g radishes

- 5g salt

- 20g rice wine vinegar

- 10g mirin

- 10g sesame oil

- 10g soy sauce

- 2 garlic cloves

- 5g sugar

- 2 chillis

- 5g dill

- 5g sesame seeds

- 10g feta cheese

- 10g almonds

Method: 

- Whisk together the rice wine vinegar, mirin, sesame oil, soy sauce, minced garlic, salt and sugar to make the marinade.

- Slice the cucumbers using a mandolin or a knife into long ribbons, then finely slice the radishes.

- Toss them in with the marinade and leave for 30 minutes.

- Meanwhile, add the almonds to a pan over a medium heat for around 5 minutes. Once the almonds are toasted, sprinkle over some salt and set aside. 

- Plate the cucumber salad and radishes before sprinkling with sesame seeds, crumbled feta, picked dill and toasted almonds.
