Fresh Guacamole

 

Serves 4

  • Ingredients:

    • 500g Avocado

    • 100g Lemon

    • 100g Red Onion

    • 30g Chillis

    • 30g Coriander

    • 50g Tomatoes

    • 5g Garlic Cloves

  • Method:

    • Cut the avocados in half and remove the pit. Score the flesh into cubes with a knife and scoop out the flesh into a bowl. 

    • Finely chop the garlic, red onion, coriander and tomatoes then add to the bowl. 

    • Cut the chillis in half and remove the seeds. Finely chop the chillis and add to the bowl. If you’re making this dish for kids, serve the chillis on the side. 

    • Sprinkle over a nice pinch of salt and black pepper. 

    • Cut the lemons into quarters and place into the bowl. 

    • Right before eating, squeeze the juice of the lemons into the guacamole bowl. Use a pestle at the table to mash everything in the bowl to get that perfect guacamole consistency. 

    • Taste again and season with some extra salt and pepper then enjoy!
